2 boneless skinless chicken breasts
1 medium onion
1 green bell pepper
1 large pizza crust (either homemade or pre-made)
1/2 cup of chicken stock
Shredded Mozzarella cheese
Fajita Seasoning
1/4 to 1/2 cup White sauce (recipe is below)
1 can fat free evaporated milk
1-tablespoon cornstarch
1 teaspoon of fat free butter (I use "I can't believe it's not Butter"
spray)
2-tablespoon Parmesan cheese (fat free if you want)
Pinch white pepper
Pinch onion powder
Pinch garlic powder
Pinch salt
Cut the chicken into bite sized portions and season with Fajita Seasoning.
If you have no Fajita seasoning, use any of your favorite seasoning or just
use salt, pepper, onion powder, and garlic powder to taste. Brown the
chicken parts in skillet and then remove.
While chicken is browning, cut onion and bell pepper into small portions.
After chicken is removed, sauté onions and bell pepper, with pinch of salt,
in same skillet until wilted. Add chicken back to skillet with onions and
bell pepper and pour in chicken stock. Let the chicken stock reduce down to
nothing.
I make the White sauce myself and this is how I do it. I pour 2 tablespoon
of evaporated milk in separate bowl, and pour rest in saucepan and heat.
Add the cornstarch to the 2 tablespoons of milk and stir until mixed. Add
that cornstarch mixture to the heated milk in saucepan. Continue cooking
and stirring until mixture has thickened. Add the pepper, onion powder,
garlic powder, salt, butter and Parmesan cheese. The spices are really to
taste, you may add more or less depending. Once mixture has thickened,
spread enough of the mixture onto the pizza dough to evenly cover it, like
you would with regular pizza sauce. You can either freeze the rest or use
it on more pizzas. I usually don't have time to make my own pizza dough, so
I usually buy pre-made pizza dough. Add layer of mozzarella cheese. Then
add chicken, onion, and bell pepper concoction. Lastly, sprinkle on a
little more mozzarella cheese on top.
Cook in preheated 450-degree oven for 10-15 minutes, checking to see if it’s
brown on top. Remove from oven and let stand for at least 5 minutes before
cutting.
