WHITE CHILE ( LOWFAT STYLE)



My brother sent this recipe to me as a substitute for tomato based red chile. The skinless chicken breast is nice change from ground meat.


Ingredients



About 1 pound of boneless, skinless chicken breast cut into cubes

1 large yellow onion chopped

1½ tsp cilantro

2 tsp garlic powder (or 1 clove of minced garlic, your choice)

1 tsp oregeno

2 cans of chopped green chiles

2 tsp of ground cumin

2 - 3 cans of fat free chicken broth

1/4 tsp of red pepper

Greek seasoning

Sliced green onions (for garnish)

Chopped Jalepeno peppers (for garnish)

Shredded Monterey Jack cheese (for garnish)

3 regular cans of Bush's Great Northern Beans



Directions

To begin, sprinkle Greek Seasoning over the chicken cubes and then brown the chicken breast in a large stew pot coated with olive oil flavored PAM. After the chicken is browned, remove and keep warm. Add the chopped onion to the drippings (what little there is) and saute for a couple of minutes until the onions start to become clear. Stir in the fat free chicken broth, green chilies, garlic powder (or minced garlic), ground cumin, oregano, cilantro and red pepper; simmer for 30 minutes. Stir in cooked chicken and beans; simmer for 10 minutes. Serve it over cooked rice like gumbo, garnish with cheese, onions, and jalepeno peppers (if wanted).
